For several months, I was a silent observer to what Chef Josh Schaeding is accomplishing along a simple highway in mid-Michigan. Not silent anymore… he’s the kind you want to keep around and celebrate!
Like any skilled entrepreneur, Josh has intentionally excluded a certain client-base. Those who like to order the same thing from the same menu every visit… well… you may not be in luck! Yet for those of us who:
